This is a very simple technique that can be done in any kitchen or at home.
Monoglyceride (Glice in the Texturas line) is an emulsifier added to fats. It can thicken an oil to a butter-like consistency, or it can be 'whipped' by using an iSi canister.
This base for this recipe is from 84... 200g of roasted garlic olive oil (or whatever oil you like), 16g glice (8%). Heat to 65ºC to dissolve flakes. Allow the oil to come to room temperature, pour it into an iSi, and charge it with 2 NO2 bullets. Shake well and foam.
