Eggs and Legs.
Due to frequent requests for our whole fried egg, we decided to do it again... this time on top of black pepper grits with a piece of Berkshire shoulder bacon and coffee Sambuca froth.
Fabian pulled out these newly available golden egg shells from Albert Uster for a refresh plate. The shell contained a green tea 'shot' with a frozen black berry on the side. One guest commented, "If that's the shell from the fried egg I just ate, then I'm seriously impressed." Sorry, but guess you're not impressed... seriously.
Frog legs are back, and I love them the most when fried. We tried to mimick 'original recipe' fried chicken in the breading for this KFF (Kentucky Fried Frog) 2 piece dinner. This was another mild fast food reference to our Taco Bell guest. He told us that KFC actually has been using C-Vap's for years. Pretty interesting, but I'm still not going to eat there.
The main point of interest on this dish is the Micro-Biscuit from the Adria technique. A batter is extruded from an iSi siphon into a paper coffee cup and microwaved for 30 seconds. The texture is a very light sponge. Rounding out the plate is a pikliz slaw and baked boiled peanuts... actually southern style boiled peanuts shelled and cooked down like barbequed baked beans. Seriously good... Kansas City style.
