Carlos is one of our PM cooks who will be leaving us soon... back to his home state of California, then to possibly Chicago. Any chefs out there seeking a hard-working and ambitious young cook should drop a line. Hopefully we can hire another one in the future.
In an effort to excercise and practice different techniques, we had Carlos put together 2 dishes for our last dinner. His flavor inspirations were eastern, both middle and far. Some of the recipes were borrowed or utilized mainly for the experience of executing them. Either way, it shows that he pays attention and doesn't mind taking on extra tasks... and we always encourage that.
