Although this will probably evoke a huge 'duh' from native Floridians, I have never before given much thought to the natural reasons for the mango's coloration... until I caught a neighboring tree in the setting sun. The red spot on each hanging fruit faces the sun in the west during the latter part of the day with a glowing intensity, almost yellowing at the western most point (not seen very well through my camera's eye). It's a simple thing, but one that left me feeling more connected with the food living around me. It took me 5 years of residing here to notice... sometimes I'm slow.
This also prompts me to believe that the eastern side of the tree must be full of fruit reddening in the AM sun. Is there a noticeable difference in flavor, then, between mangoes bathing in the AM sun vs. the PM? Has anyone ever done a taste comparison?
