We did an event last night in conjunction with Jeremiah Bullfrog and the Gastropod with a street food theme. This was a Cobaya Miami event organized by Frodesnor who named it "Podzilla."
Street food encompasses a huge range of international dishes, but we kept our focus mostly on American street food. America lacks a real street food scene in comparison with other countries, but hopefully, like all other things, we will thrive and excel in this area in the near future.
We worked our butts off for this event, so pictures were far and few in between. I'm sure there will be many shots taken by the Cobaya group surfacing over the internet in the next few days, so consider this a preview.
Chef Mike and the outdoor chicken frying rig.
The final product (brined, buttermilk dredged, and fried)... a steam table full of hot tamales in the background.
Chadzilla and Chef K representing with our Stove Monkey Notorious PIG digs by the chicken liver grill station.
The outdoor 'Paradigm' version of a fish taco salad (50º swordfish, cabbage & greens, fried homemade tortillas, beer batter crispies, roasted tomato vinaigrette, Mexican crema, avocado vanilla gelato, baby tomato salsa) or 'street food: No one said it was pretty' or 'don't ever put 12 or more elements on an outdoor dish for 60 plus people'
homemade corn tortillas on Chef K's electric tortilla press.
Mike knockin' out some delta blues hot tamales (check out the tamale trail website to learn more about the unique colorful history of this real American street food... that's right, American). Our version substituted chicken confit in place of the traditional pork.
A basket full of chicharrone biscuits.
The view outside by the bay before the event officially kicked off.
A very big thanks to all in the Cobaya Miami group who supported this great fun event, and as always... "until next time."
